Chardonnay - Los Carneros 2015

Our winemaker, Eric Lyman, chose to produce this Chardonnay in the Chablis style, unoaked and vinified in stainless steel tanks. This process produces racy, green apple acidity and gives it versatility in pairing with different foods.

Although most “New World” Chardonnays tend to be produced for early drinking, this Chardonnay, which has hints of earthy wet stone minerality, will intensify in some ways with slight aging. After a few years in bottle, this Chardonnay will reveal delicate honey and luscious creamy fruit notes of Green Apple.

In order to coax out the honey and green apple characteristics of this wine in its youth, pair it with food that will soften the dominant feature of the wine, which is the acid. A lovely cheese plate is a great way to start your meal. Blue and Parmesan cheese, each salt dominant, will soften the wine nicely. Although it is widely thought that it is the fat in cheese that softens the acidity in a bright white wine, it is actually the saltiness of the cheese that rounds a young white wine’s acidic edges
