Our Winemaker, Eric Lyman, choose to separate the juice into two equally sized lots after crushing, and gave 24 hours of skin contact to one of the halves. This process increases varietal aromas and mouth feel prior to fermentation. The two lots were then blended together in stainless steel tanks.
